Assessment of quality and safety of ethyl alcohol in alcoholic beverages
Annotation: The need to saturate the market with high-quality and safe alcoholic products of domestic production causes the development of new directions in the development and production of alcoholic beverages, which priority is to guarantee the safety of these products and reduce the effects of toxic, carcinogenic and mutagenic effects of alcohol on the human body. The alcoholic beverage industry in Ukraine is one of the most dynamic. To date, leading manufacturers of alcoholic beverages are used as additives various flavors and aromatic substances mainly synthetic origin, which can adversely affect the human body. Therefore, the use of natural plant or animal raw materials plays an important role.
