Annotation: At the current stage of Ukraine's development, coffee market is one of the fastest growing markets in the food industry. That is why the article deals with coffee as a product of consumption, the state of the modern coffee market and the distribution of coffee beans in the world. The main types of coffee are presented, their characteristics and main differences. The problems of falsification of coffee are considered both global and local for the Ukrainian market. Detailed analysis of the most important varieties, Arabica and Robusta, found out which variety is considered to be more qualitative and different from the others. The article considers the regions of cultivation of coffee beans and highlights the largest producers. Studying the coffee market of Ukraine revealed the spread of the problem of falsification of the product, which reaches the consumer and the causes of its occurrence. Investigating the appearance and spread of falsification on the market, there were identified causes of incompleteness of the legislation of the country, the inefficiency of the quality control bodies, or their absence, lack of knowledge of the consumer and his solvency. The article presents the main types of coffee falsification and their characteristics. In order to prevent the use of a fake, the methods of detecting a fake product and ways of preventing a buyer from buying a falsified product are described. According to the volume of the studied material and after the analysis of the Ukrainian coffee market, measures to prevent and combat counterfeiting have been developed and proposed.
